- 1 box (15.25 oz) yellow cake mix
- 3 ripe bananas, mashed
- 2 large eggs
Instructions
- 1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- 2. In a large bowl, mash the bananas until smooth.
- 3. Add the eggs and cake mix, and stir until fully combined — do not overmix.
- 4. Pour the batter into the prepared loaf pan and smooth the top.
- 5. Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
- 6. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- Use overripe bananas for the sweetest flavor.
- For extra texture, stir in chocolate chips, chopped nuts, or a sprinkle of cinnamon.
- This recipe also works great as muffins, bake for 18–20 minutes instead.
