Description

Ingredients

  • 2/3 cup brown sugar
  • 2 large eggs
  • 1 1/2 cups old-fashioned rolled oats
  • 1 tsp vanilla extract

Instructions

  • 1. Preheat oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
  • 2. Stir together the peanut butter and brown sugar until smooth.
  • 3. Add the eggs and vanilla, mixing until fully combined.
  • 4. Stir in the oats until a thick dough forms.
  • 5. Scoop tablespoon-sized balls of dough onto the baking sheet.
  • 6. Flatten slightly with a fork or your fingertips.
  • 7. Bake for 10โ€“12 minutes or until edges are set.
  • 8. Cool on the baking sheet for 5 minutes before transferring to a rack.

Notes

  • For chewier cookies, slightly underbake them.
  • Add chocolate chips or chopped peanuts for extra texture.
