- 1 cup creamy peanut butter
- 2/3 cup brown sugar
- 2 large eggs
- 1 1/2 cups old-fashioned rolled oats
- 1 tsp vanilla extract
Instructions
- 1. Preheat oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
- 2. Stir together the peanut butter and brown sugar until smooth.
- 3. Add the eggs and vanilla, mixing until fully combined.
- 4. Stir in the oats until a thick dough forms.
- 5. Scoop tablespoon-sized balls of dough onto the baking sheet.
- 6. Flatten slightly with a fork or your fingertips.
- 7. Bake for 10โ12 minutes or until edges are set.
- 8. Cool on the baking sheet for 5 minutes before transferring to a rack.
Notes
- For chewier cookies, slightly underbake them.
- Add chocolate chips or chopped peanuts for extra texture.
- These cookies are naturally gluten-free if using certified gluten-free oats.
