  • For the cake:
  • 1 cup apple cider
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1/2 cup sour cream or Greek yogurt
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/2 teaspoon salt
  • For the topping:
  • 1/4 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 tablespoon cinnamon

Instructions

  • 1. Preheat oven to 350ยฐF (175ยฐC). Grease and flour a bundt pan.
  • 2. In a small saucepan, simmer apple cider over medium heat until reduced to about 1/2 cup. Let cool.
  • 3. In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  • 4. Beat in eggs one at a time, then mix in sour cream and vanilla.
  • 5. In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  • 6. Add dry ingredients to wet mixture alternately with reduced apple cider, beginning and ending with dry ingredients. Mix until just combined.
  • 7. Pour batter into prepared bundt pan and smooth the top.
  • 8. Bake for 40โ€“45 minutes, or until a toothpick inserted into the center comes out clean.
  • 9. Cool cake in pan for 10 minutes, then invert onto a wire rack.
  • 10. Brush warm cake with melted butter and sprinkle generously with cinnamon sugar mixture.

  • Reduce the apple cider ahead of time to intensify flavor.
