A moist, spiced Apple Cider Donut Cake and coated in cinnamon sugar, just like your favorite apple cider donuts in cake form.

- For the cake:
- 1 cup apple cider
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 3 large eggs
- 1/2 cup sour cream or Greek yogurt
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon cloves
- 1/2 teaspoon salt
- For the topping:
- 1/4 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 1 tablespoon cinnamon
Instructions
- 1. Preheat oven to 350ยฐF (175ยฐC). Grease and flour a bundt pan.
- 2. In a small saucepan, simmer apple cider over medium heat until reduced to about 1/2 cup. Let cool.
- 3. In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- 4. Beat in eggs one at a time, then mix in sour cream and vanilla.
- 5. In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
- 6. Add dry ingredients to wet mixture alternately with reduced apple cider, beginning and ending with dry ingredients. Mix until just combined.
- 7. Pour batter into prepared bundt pan and smooth the top.
- 8. Bake for 40โ45 minutes, or until a toothpick inserted into the center comes out clean.
- 9. Cool cake in pan for 10 minutes, then invert onto a wire rack.
- 10. Brush warm cake with melted butter and sprinkle generously with cinnamon sugar mixture.
Notes
- Reduce the apple cider ahead of time to intensify flavor.
- This cake is even better the next day as the flavors develop.
- Serve with warm apple cider or vanilla ice cream for a cozy fall dessert.
