- 3 tablespoons unsalted butter
- 1 bag (10 oz) gluten-free mini marshmallows
- 6 cups gluten-free crispy rice cereal
- 1 cup semi-sweet chocolate chips (ensure gluten-free)
- 1/2 teaspoon vanilla extract (optional)
Instructions
- 1. Grease a 9×13 inch baking dish with butter or non-stick spray.
- 2. In a large pot over low heat, melt the butter.
- 3. Add the marshmallows and stir until completely melted and smooth.
- 4. Remove from heat and stir in the vanilla extract, if using.
- 5. Quickly mix in the gluten-free crispy rice cereal until evenly coated.
- 6. Stir in the chocolate chips while the mixture is still warm but not hot enough to melt them completely.
- 7. Transfer the mixture to the prepared baking dish and press evenly with a spatula.
- 8. Allow to cool completely, then cut into squares and serve.
Notes
- Be sure to check that both your crispy rice cereal and chocolate chips are certified gluten-free, as some brands may contain traces of gluten.
- Store in an airtight container for up to 3 days.
- You can melt additional chocolate and drizzle on top for a decorative finish.
