Description
A simple, delicious treat made with gluten-free crispy rice cereal, rich chocolate, and gooey marshmallows. Perfect for a quick dessert or snack.
Ingredients
3 tablespoons unsalted butter
1 bag (10 oz) gluten-free mini marshmallows
6 cups gluten-free crispy rice cereal
1 cup semi-sweet chocolate chips (ensure gluten-free)
1/2 teaspoon vanilla extract (optional)
Instructions
1. Grease a 9×13 inch baking dish with butter or non-stick spray.
2. In a large pot over low heat, melt the butter.
3. Add the marshmallows and stir until completely melted and smooth.
4. Remove from heat and stir in the vanilla extract, if using.
5. Quickly mix in the gluten-free crispy rice cereal until evenly coated.
6. Stir in the chocolate chips while the mixture is still warm but not hot enough to melt them completely.
7. Transfer the mixture to the prepared baking dish and press evenly with a spatula.
8. Allow to cool completely, then cut into squares and serve.
Notes
Be sure to check that both your crispy rice cereal and chocolate chips are certified gluten-free, as some brands may contain traces of gluten.
Store in an airtight container for up to 3 days.
You can melt additional chocolate and drizzle on top for a decorative finish.
