A fun and easy gluten-free snack or dessert using Kix cereal—perfect for lunchboxes, party treats, or a nostalgic bite for gluten-sensitive snackers.
Ingredients
4 cups Kix cereal (confirm gluten-free label)
1/2 cup creamy peanut butter
1/2 cup honey or light corn syrup
1/2 tsp vanilla extract
Optional: 1/4 cup mini chocolate chips or dried fruit
Instructions
1. Line an 8×8-inch baking pan with parchment paper or lightly grease it.
2. In a saucepan over medium heat, combine peanut butter and honey. Stir until melted and smooth.
3. Remove from heat and stir in vanilla extract.
4. In a large bowl, pour warm mixture over Kix cereal and mix gently until fully coated.
5. Press mixture firmly into the prepared pan using a spatula or damp hands.
6. If using, sprinkle chocolate chips or dried fruit on top and lightly press into surface.
7. Let cool for 1 hour or refrigerate until set.
8. Cut into bars or squares and serve.
