Description
A vibrant, tropical twist on classic cream pie, this Baja Blast Pie features a creamy citrus filling made with Mountain Dew Baja Blast soda and a crisp graham cracker crust.

- 1 1/2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 6 tbsp unsalted butter, melted
- 1/4 tsp salt
- 1 cup Mountain Dew Baja Blast
- 1/4 cup lime juice
- 1/4 cup cornstarch
- 1/2 cup granulated sugar
- 4 large egg yolks
- 1 cup whole milk
- 1/4 cup heavy cream
- 1 tbsp unsalted butter
- 1 tsp vanilla extract
- Optional: a few drops teal or turquoise food coloring
- Topping:
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
- Lime zest or crushed candy for garnish
Instructions
- 1. Preheat oven to 350ยฐF (175ยฐC).
- 2. In a bowl, mix graham cracker crumbs, sugar, salt, and melted butter until combined.
- 3. Press mixture firmly into the bottom and sides of a 9-inch pie dish.
- 4. Bake crust for 8โ10 minutes, then cool completely.
- 5. In a medium saucepan, whisk together Baja Blast, lime juice, cornstarch, and sugar until smooth.
- 6. Cook over medium heat until mixture begins to thicken slightly.
- 7. In a small bowl, whisk egg yolks. Slowly pour about 1/2 cup of the hot mixture into yolks while whisking to temper them.
- 8. Return tempered yolks to the saucepan and cook, stirring constantly, until thick and bubbly.
- 9. Remove from heat and stir in milk, cream, butter, and vanilla until smooth. Add food coloring if desired.
- 10. Pour filling into cooled crust, smoothing the top.
- 11. Refrigerate for at least 4 hours, or until set.
- 12. Whip the cream with powdered sugar and vanilla until soft peaks form.
- 13. Top the chilled pie with whipped cream and garnish with lime zest or crushed candy.
Notes
- For a stronger Baja Blast flavor, reduce the soda by simmering it down before using.
- Store pie covered in the refrigerator for up to 3 days.
- If you prefer a no-bake crust, chill it for 1 hour instead of baking.
