Description

A vibrant, tropical twist on classic cream pie, this Baja Blast Pie features a creamy citrus filling made with Mountain Dew Baja Blast soda and a crisp graham cracker crust.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • 1/4 tsp salt
  • 1 cup Mountain Dew Baja Blast
  • 1/4 cup lime juice
  • 1/4 cup cornstarch
  • 1/2 cup granulated sugar
  • 4 large egg yolks
  • 1 cup whole milk
  • 1/4 cup heavy cream
  • 1 tbsp unsalted butter
  • 1 tsp vanilla extract
  • Optional: a few drops teal or turquoise food coloring
  • Topping:
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • Lime zest or crushed candy for garnish

Instructions

  • 1. Preheat oven to 350ยฐF (175ยฐC).
  • 2. In a bowl, mix graham cracker crumbs, sugar, salt, and melted butter until combined.
  • 3. Press mixture firmly into the bottom and sides of a 9-inch pie dish.
  • 4. Bake crust for 8โ€“10 minutes, then cool completely.
  • 5. In a medium saucepan, whisk together Baja Blast, lime juice, cornstarch, and sugar until smooth.
  • 6. Cook over medium heat until mixture begins to thicken slightly.
  • 7. In a small bowl, whisk egg yolks. Slowly pour about 1/2 cup of the hot mixture into yolks while whisking to temper them.
  • 8. Return tempered yolks to the saucepan and cook, stirring constantly, until thick and bubbly.
  • 9. Remove from heat and stir in milk, cream, butter, and vanilla until smooth. Add food coloring if desired.
  • 10. Pour filling into cooled crust, smoothing the top.
  • 11. Refrigerate for at least 4 hours, or until set.
  • 12. Whip the cream with powdered sugar and vanilla until soft peaks form.
  • 13. Top the chilled pie with whipped cream and garnish with lime zest or crushed candy.

Notes

  • For a stronger Baja Blast flavor, reduce the soda by simmering it down before using.
  • Store pie covered in the refrigerator for up to 3 days.
  • If you prefer a no-bake crust, chill it for 1 hour instead of baking.
