- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 2/3 cup milk
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups apples, peeled and diced
- 2 tbsp unsalted butter, melted
- For glaze:
- 1 cup powdered sugar
- 2โ3 tbsp milk
- 1/2 tsp vanilla extract
Instructions
- 1. Preheat oven to 375ยฐF (190ยฐC). Grease a standard muffin tin or line with paper liners.
- 2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
- 3. In another bowl, whisk milk, eggs, vanilla, and melted butter until combined.
- 4. Fold wet ingredients into dry ingredients until just combined. Do not overmix.
- 5. Stir in diced apples.
- 6. Spoon batter evenly into muffin cups, filling about 3/4 full.
- 7. Bake for 18โ20 minutes, until golden and a toothpick comes out clean.
- 8. While fritters bake, prepare glaze by whisking powdered sugar, milk, and vanilla until smooth.
- 9. Cool fritters for 5 minutes, then drizzle with glaze and serve warm.
Notes
- These fritters are baked instead of fried, making them lighter but still full of flavor.
- Use firm apples like Granny Smith or Honeycrisp for the best texture.
- You can also roll them in cinnamon sugar instead of glazing for a different finish.
