Ingredients

  • 1/2 tsp vanilla extract

Instructions

  • 1. Preheat oven to 375ยฐF (190ยฐC). Grease a standard muffin tin or line with paper liners.
  • 2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  • 3. In another bowl, whisk milk, eggs, vanilla, and melted butter until combined.
  • 4. Fold wet ingredients into dry ingredients until just combined. Do not overmix.
  • 5. Stir in diced apples.
  • 6. Spoon batter evenly into muffin cups, filling about 3/4 full.
  • 7. Bake for 18โ€“20 minutes, until golden and a toothpick comes out clean.
  • 8. While fritters bake, prepare glaze by whisking powdered sugar, milk, and vanilla until smooth.
  • 9. Cool fritters for 5 minutes, then drizzle with glaze and serve warm.

Notes

  • These fritters are baked instead of fried, making them lighter but still full of flavor.
