A dreamy frozen treat combining creamy banana pudding ice cream with soft vanilla wafer cookies for the ultimate nostalgic ice cream sandwich experience.
Ingredients
2 cups vanilla ice cream, softened
1 ripe banana, mashed
1/2 cup cold milk
1/2 cup instant banana pudding mix
1/2 teaspoon vanilla extract
24 soft vanilla wafer cookies or graham cracker squares
Optional: crushed vanilla wafers or banana chips for coating
Instructions
1. In a mixing bowl, whisk together mashed banana, milk, pudding mix, and vanilla extract until smooth.
2. Fold in the softened vanilla ice cream until well combined.
3. Pour the mixture into a shallow dish or loaf pan and freeze for 2–3 hours until firm but scoopable.
4. Place 12 vanilla wafer cookies face down on a tray.
5. Scoop a generous tablespoon of banana pudding ice cream onto each cookie.
6. Top with another cookie to create a sandwich and press gently to seal.
7. Roll edges in crushed wafers or banana chips if desired.
8. Freeze sandwiches on a parchment-lined tray for 1 hour to firm up before serving.

For a lighter version, use frozen whipped topping instead of ice cream.
