- 1 cup granulated sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 3 tbsp unsweetened cocoa powder (optional, for chocolate version)
- 1 cup mashed ripe bananas (about 2 large)
- 1/3 cup vegetable oil
- 1 tbsp white vinegar
- 1 tsp vanilla extract
- 1/2 cup water
Instructions
- 1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan.
- 2. In the pan (or a mixing bowl), whisk together flour, sugar, baking soda, salt, and cocoa powder if using.
- 3. Make three wells in the dry ingredients: one for oil, one for vinegar, and one for vanilla.
- 4. Pour mashed bananas, oil, vinegar, and vanilla into the wells, then add water over the top.
- 5. Stir until just combined and smooth.
- 6. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
- 7. Cool completely before slicing and serving.
Notes
- This cake is naturally vegan and budget-friendly.
- You can add chocolate chips, chopped nuts, or a dusting of powdered sugar for extra flavor.
- For a lighter cake, replace half the oil with unsweetened applesauce.
