Description

A fun and quirky Banana Wacky Cake made without eggs, dairy, or butter is moist, fluffy, and full of banana flavor.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 tbsp unsweetened cocoa powder (optional, for chocolate version)
  • 1 cup mashed ripe bananas (about 2 large)
  • 1/3 cup vegetable oil
  • 1 tbsp white vinegar
  • 1 tsp vanilla extract
  • 1/2 cup water

Instructions

  • 1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan.
  • 2. In the pan (or a mixing bowl), whisk together flour, sugar, baking soda, salt, and cocoa powder if using.
  • 3. Make three wells in the dry ingredients: one for oil, one for vinegar, and one for vanilla.
  • 4. Pour mashed bananas, oil, vinegar, and vanilla into the wells, then add water over the top.
  • 5. Stir until just combined and smooth.
  • 6. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  • 7. Cool completely before slicing and serving.

Notes

  • This cake is naturally vegan and budget-friendly.
  • You can add chocolate chips, chopped nuts, or a dusting of powdered sugar for extra flavor.
  • For a lighter cake, replace half the oil with unsweetened applesauce.
