- 200 g marzipan, grated or finely chopped
- 100 g all-purpose flour
- 75 g granulated sugar
- 1 large egg
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp almond extract
- Sliced almonds or powdered sugar, for topping
Instructions
- 1. Preheat the oven to 180ยฐC (350ยฐF) and line a baking tray with parchment paper.
- 2. In a bowl, combine the grated marzipan and granulated sugar.
- 3. Beat in the egg and almond extract until smooth.
- 4. Stir in the flour, baking powder, and salt until a soft dough forms.
- 5. Scoop tablespoon-sized portions of dough and roll into balls.
- 6. Place on the prepared baking tray and flatten slightly.
- 7. Top with sliced almonds or dust with powdered sugar.
- 8. Bake for 10โ12 minutes until lightly golden at the edges.
- 9. Allow to cool on the tray for 5 minutes before transferring to a wire rack.
Notes
- Do not overbake to keep the cookies soft and chewy.
- If the dough is sticky, chill for 15 minutes before shaping.
- Store in an airtight container for up to 5 days.
