Instructions
- 1. Preheat oven to 350ยฐF (175ยฐC) and grease a muffin tin or line with paper liners.
- 2. In a bowl, mix shredded coconut and sugar until combined.
- 3. Add eggs, melted butter, and vanilla extract, stirring until fully incorporated.
- 4. Mix in flour just until combined.
- 5. Spoon the mixture evenly into the prepared muffin tin.
- 6. Bake for 20โ25 minutes, until tops are golden and set.
- 7. Cool slightly before removing from the pan and serving.
Notes
- These cakes are traditionally rustic and slightly crisp on the outside.
- They can be served plain or dusted lightly with powdered sugar.
