Description

These Black Garlic and Dark Chocolate Truffles offer an unexpectedly harmonious and luxurious blend of sweet and savory flavors. This no-bake recipe is surprisingly simple to make, requiring minimal ingredients, and delivers a decadent experience perfect for gifting or indulging.

Ingredients

Scale

8 oz Good Quality Dark Chocolate (60-70% cacao)
1/2 cup Heavy Cream
68 Black Garlic Cloves
2 tbsp Unsalted Butter
1 tsp Vanilla Extract
1/4 tsp Sea Salt
1/4 cup Cocoa Powder (for coating)

Instructions

  1. Finely chop the black garlic cloves to a paste-like consistency
  2. Place chopped dark chocolate and butter in a heatproof bowl
  3. In a small saucepan, gently heat the heavy cream until it just begins to simmer around the edges; do not boil
  4. Pour the hot cream over the chocolate and butter and let it sit for 2-3 minutes to melt everything
  5. Stir the mixture gently from the center outwards until it forms a smooth, glossy ganache
  6. Stir in the chopped black garlic, vanilla extract, and sea salt, ensuring it combines well
  7. Cover the bowl with plastic wrap and chill the ganache in the refrigerator for at least 2 hours, or until firm enough to roll
  8. Scoop small portions of the chilled ganache and roll them into 1-inch balls
  9. Roll each truffle in cocoa powder until fully coated

Notes

Use high-quality dark chocolate for the best flavor.

Avoid over-heating the cream to prevent scorching the chocolate.

Work quickly when rolling truffles to prevent the ganache from melting in your hands. If it softens, chill it again.

For extra smoothness, blend black garlic with a tiny bit of cream before adding to the ganache.

Store in an airtight container in the refrigerator for up to 1 week. Bring to room temperature 15-20 minutes before serving.

Truffles can be frozen in an airtight container for up to 3 months; thaw overnight in the refrigerator.

For variations, add a pinch of cayenne pepper, or coat truffles in chopped nuts, shredded coconut, or powdered sugar.

Experiment with different dark chocolate percentages for desired sweetness or richness.
