- 1 cup granulated sugar
- 1/3 cup cornstarch
- 2 tbsp lemon juice
- 1/4 tsp salt
- 1 tsp vanilla extract (optional)
- 1 tbsp unsalted butter (optional, for richness)
Instructions
- 1. In a large saucepan, combine the blackberries, sugar, cornstarch, lemon juice, and salt.
- 2. Cook over medium heat, stirring frequently, until the berries release their juices and the mixture begins to thicken, about 8โ10 minutes.
- 3. Once thickened, remove from heat and stir in the vanilla extract and butter, if using.
- 4. Allow the filling to cool completely before using in pies or other desserts.
- 5. If not using immediately, transfer to jars or airtight containers and refrigerate for up to 5 days or freeze for up to 3 months.
Notes
- This filling works beautifully for pies, cobblers, or as a topping for cheesecake and ice cream.
- If you prefer a smoother filling, lightly mash the berries with a potato masher while cooking.
- Adjust sugar to taste depending on the sweetness of your berries.
