Description

A sweet and tart blackberry pie filling made from fresh or frozen berries, perfect for pies, tarts, or dessert toppings.

Ingredients

Scale
  • 6 cups fresh or frozen blackberries
  • 1 cup granulated sugar
  • 1/3 cup cornstarch
  • 2 tbsp lemon juice
  • 1/4 tsp salt
  • 1 tsp vanilla extract (optional)
  • 1 tbsp unsalted butter (optional, for richness)

Instructions

  • 1. In a large saucepan, combine the blackberries, sugar, cornstarch, lemon juice, and salt.
  • 2. Cook over medium heat, stirring frequently, until the berries release their juices and the mixture begins to thicken, about 8โ€“10 minutes.
  • 3. Once thickened, remove from heat and stir in the vanilla extract and butter, if using.
  • 4. Allow the filling to cool completely before using in pies or other desserts.
  • 5. If not using immediately, transfer to jars or airtight containers and refrigerate for up to 5 days or freeze for up to 3 months.

Notes

  • This filling works beautifully for pies, cobblers, or as a topping for cheesecake and ice cream.
  • If you prefer a smoother filling, lightly mash the berries with a potato masher while cooking.
  • Adjust sugar to taste depending on the sweetness of your berries.
