Ingredients

  • 1 1/2 cups whole wheat flour (or all-purpose flour)
  • 1/2 cup oat flour (or additional whole wheat flour)
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder (optional)
  • 1 cup cottage cheese
  • 1/2 cup plain Greek yogurt
  • 2 large eggs
  • 2 tablespoons olive oil or melted butter
  • 1/4 cup shredded cheddar or mozzarella (optional)

Instructions

  • 1. Preheat oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper.
  • 2. In a large bowl, whisk together whole wheat flour, oat flour, baking powder, baking soda, salt, and garlic powder.
  • 3. In another bowl, mix cottage cheese, Greek yogurt, eggs, and olive oil until smooth.
  • 4. Add wet ingredients to dry and stir until just combined. If using cheese, fold it in now.
  • 5. Scoop 1/4-cup portions of dough onto the baking sheet, spacing them apart.
  • 6. Bake for 14โ€“16 minutes, or until biscuits are puffed and golden brown.
  • 7. Cool slightly before serving warm.
