Description

Chewy brown sugar cookies inspired by the classic brown sugar Pop-Tart, filled with a cinnamon-sugar center and topped with a sweet glaze.

  • 2 tablespoons melted butter

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon

Instructions

  • 1. Preheat oven to 350ยฐF (175ยฐC). Line baking sheets with parchment paper.
  • 2. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  • 3. Beat in eggs and vanilla until smooth.
  • 4. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  • 5. Gradually mix dry ingredients into wet until just combined.
  • 6. In a small bowl, combine filling ingredients: brown sugar, cinnamon, and melted butter.
  • 7. Scoop 2-tablespoon portions of cookie dough, flatten slightly, place 1 teaspoon of filling in the center, and fold dough around it to seal. Roll into a ball.
  • 8. Place dough balls on prepared baking sheets and bake 10โ€“12 minutes, until golden around the edges.
  • 9. Cool cookies completely before glazing.
  • 10. Whisk glaze ingredients together until smooth, then drizzle over cooled cookies. Let set before serving.

Notes

  • For extra Pop-Tart vibes, add a pinch of nutmeg to the filling.
  • Cookies stay soft for several days in an airtight container.
  • If you want a thicker glaze, reduce the milk to 1 tablespoon.
