- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 1/2 cups semi-sweet chocolate chips
Instructions
- 1. In a large bowl, mix peanut butter and softened butter until smooth.
- 2. Gradually stir in powdered sugar until a thick dough forms.
- 3. Roll mixture into 1-inch balls and place on a parchment-lined baking sheet.
- 4. Freeze for 20โ30 minutes until firm.
- 5. Melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- 6. Dip each peanut butter ball into melted chocolate, leaving a small circle of peanut butter visible on top.
- 7. Place back on parchment paper and refrigerate until chocolate is set.
Notes
- For easier dipping, insert a toothpick into each ball before dipping.
- Store buckeyes in the refrigerator for up to 1 week or freeze for longer storage.
