- 1/2 cup ricotta cheese (drained)
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg

- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup mini chocolate chips
- 1/2 cup chopped pistachios (optional)
- Powdered sugar for dusting
Instructions
- 1. Preheat oven to 350ยฐF (175ยฐC). Line baking sheets with parchment paper.
- 2. In a large bowl, cream together butter, ricotta, granulated sugar, and brown sugar until light and fluffy.
- 3. Beat in egg, vanilla, and orange zest until well combined.
- 4. In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
- 5. Gradually mix dry ingredients into wet mixture until just combined.
- 6. Fold in mini chocolate chips and pistachios if using.
- 7. Scoop dough into rounded tablespoons and place on prepared baking sheets, spacing 2 inches apart.
- 8. Bake 10โ12 minutes, or until edges are lightly golden.
- 9. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
- 10. Dust with powdered sugar before serving.
Notes
- For authentic cannoli flavor, donโt skip the orange zest.
- You can substitute ricotta with mascarpone for an even creamier texture.
- Store cookies in an airtight container for up to 4 days; dust with powdered sugar just before serving.
