Soft, fudgy chocolate cookies filled with a cherry jam center and topped with a drizzle of melted chocolate.

- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/3 cup cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/3 cup cherry preserves or jam
- 1/2 cup melted chocolate for drizzling (optional)
Instructions
- 1. Preheat oven to 350ยฐF (175ยฐC). Line two baking sheets with parchment paper.
- 2. Cream butter, granulated sugar, and brown sugar until light and fluffy.
- 3. Beat in egg and vanilla until smooth.
- 4. In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
- 5. Add dry ingredients to the wet mixture and stir until a soft dough forms.
- 6. Scoop tablespoon-sized balls of dough onto the baking sheets.
- 7. Use your thumb or the back of a spoon to make an indent in the center of each cookie.
- 8. Fill each indentation with a small spoonful of cherry preserves.
- 9. Bake for 9โ11 minutes or until the edges are set.
- 10. Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack.
- 11. Drizzle with melted chocolate once cooled, if desired.
Notes
- If the dough is too soft, chill it for 20 minutes to help hold shape.
- Use thick cherry preserves to prevent spilling during baking.
- These cookies stay soft for days and freeze well.
