Ingredients

  • 3 tablespoons unsalted butter
  • 1 package (10 oz) marshmallows
  • 1/2 teaspoon vanilla extract
  • 6 cups crispy rice cereal
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil or shortening

Instructions

  • 1. Line an 8×8-inch pan with parchment paper.
  • 2. In a large saucepan, melt butter over low heat.
  • 3. Add marshmallows and stir until fully melted and smooth.
  • 4. Remove from heat and stir in vanilla extract.
  • 5. Add crispy rice cereal and gently fold until evenly coated.
  • 6. Press mixture firmly into the prepared pan and let set for 30 minutes.
  • 7. Cut into squares.
  • 8. Melt chocolate chips with coconut oil until smooth.
  • 9. Dip the bottom half of each Rice Krispie treat into melted chocolate.
  • 10. Place on parchment paper and let chocolate set before serving.
