Description

Soft, chocolatey cookies filled with a rich, silky chocolate ganache center.


Ingredients

  • 1 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 1/2 cup chocolate chips
  • 2 tablespoons heavy cream

Instructions

  • 1. Preheat oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
  • 2. Whisk together flour, cocoa powder, salt, and baking powder.
  • 3. In a separate bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  • 4. Add the egg yolk, vanilla extract, and milk; mix to combine.
  • 5. Stir in the dry ingredients until a soft dough forms.
  • 6. Scoop tablespoon-sized balls of dough and place on the baking sheet.
  • 7. Use your thumb to gently press an indentation into the center of each dough ball.
  • 8. Bake for 10โ€“12 minutes, until the edges are set.
  • 9. While the cookies cool, melt chocolate chips with heavy cream until smooth to make the ganache.
  • 10. Spoon ganache into the thumbprints and allow to set before serving.

Notes

  • For extra flavor, add a pinch of espresso powder to the dough.
  • You can chill the filled cookies briefly to help the ganache set more quickly.
