Soft, chocolatey cookies filled with a rich, silky chocolate ganache center.
Ingredients

- 1 cup all-purpose flour
- 1/3 cup cocoa powder
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 2 tablespoons milk
- 1/2 cup chocolate chips
- 2 tablespoons heavy cream
Instructions
- 1. Preheat oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
- 2. Whisk together flour, cocoa powder, salt, and baking powder.
- 3. In a separate bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- 4. Add the egg yolk, vanilla extract, and milk; mix to combine.
- 5. Stir in the dry ingredients until a soft dough forms.
- 6. Scoop tablespoon-sized balls of dough and place on the baking sheet.
- 7. Use your thumb to gently press an indentation into the center of each dough ball.
- 8. Bake for 10โ12 minutes, until the edges are set.
- 9. While the cookies cool, melt chocolate chips with heavy cream until smooth to make the ganache.
- 10. Spoon ganache into the thumbprints and allow to set before serving.
Notes
- For extra flavor, add a pinch of espresso powder to the dough.
- You can chill the filled cookies briefly to help the ganache set more quickly.
