Christmas Banana Bread

Description

A festive twist on classic banana bread, filled with warm spices, cranberries, and nuts for holiday flavor in every slice.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1 tsp vanilla extract
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans or walnuts

Instructions

  • 1. Preheat oven to 350ยฐF (175ยฐC). Grease or line a standard loaf pan.
  • 2. In a bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  • 3. In another large bowl, cream together butter and brown sugar until light and fluffy.
  • 4. Beat in the eggs, mashed bananas, and vanilla until smooth.
  • 5. Add the dry ingredients to the wet mixture and stir gently until just combined.
  • 6. Fold in the dried cranberries and nuts.
  • 7. Pour the batter into the prepared loaf pan and smooth the top.
  • 8. Bake for 55โ€“65 minutes or until a toothpick inserted into the center comes out clean.
  • 9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • For extra holiday sweetness, add white chocolate chips.
  • Use very ripe bananas for the best flavor and moisture.
  • This bread freezes well wrap tightly and store for up to 3 months.
