- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 large eggs
- 3 ripe bananas, mashed
- 1 tsp vanilla extract
- 1/2 cup dried cranberries
- 1/2 cup chopped pecans or walnuts
Instructions
- 1. Preheat oven to 350ยฐF (175ยฐC). Grease or line a standard loaf pan.
- 2. In a bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
- 3. In another large bowl, cream together butter and brown sugar until light and fluffy.
- 4. Beat in the eggs, mashed bananas, and vanilla until smooth.
- 5. Add the dry ingredients to the wet mixture and stir gently until just combined.
- 6. Fold in the dried cranberries and nuts.
- 7. Pour the batter into the prepared loaf pan and smooth the top.
- 8. Bake for 55โ65 minutes or until a toothpick inserted into the center comes out clean.
- 9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- For extra holiday sweetness, add white chocolate chips.
- Use very ripe bananas for the best flavor and moisture.
- This bread freezes well wrap tightly and store for up to 3 months.
