Description

These coconut marshmallow cookies are soft, chewy, and so easy to make. With just three main ingredients, they’re the perfect sweet treat for any occasion!


Ingredients

  • 1 cup shredded coconut (sweetened or unsweetened)

  • 1 cup mini marshmallows (or chopped large marshmallows)

  • 1 ½ cups basic sugar cookie dough (homemade or store-bought)


Instructions

  • Preheat the oven to 350°F (175°C).

  • In a bowl, combine shredded coconut and mini marshmallows with the cookie dough. Mix until evenly distributed.

  • Use a cookie scoop or spoon to drop small mounds of dough onto a parchment-lined baking sheet.

  • Bake for 10–12 minutes, until edges are lightly golden and marshmallows are gooey.

  • Let cool for 5 minutes on the baking sheet, then transfer to a wire rack to finish cooling.

Notes
