Description

Rich, fudgy brownies made with cottage cheese for extra protein and moisture, a healthier twist on a classic treat without sacrificing indulgence.

Ingredients

Scale
  • 1 cup low-fat cottage cheese
  • 2 large eggs
  • 1/2 cup maple syrup or honey
  • 1/4 cup coconut sugar (or brown sugar)
  • 1 teaspoon vanilla extract
  • 1/2 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup chocolate protein powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup dark chocolate chips

Instructions

  • 1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  • 2. Blend cottage cheese, eggs, maple syrup, coconut sugar, and vanilla until smooth.
  • 3. In a separate bowl, whisk almond flour, cocoa powder, protein powder, baking powder, and salt.
  • 4. Pour wet mixture into dry ingredients and stir until just combined.
  • 5. Fold in chocolate chips.
  • 6. Spread batter evenly into prepared pan.
  • 7. Bake 25–30 minutes, or until edges are set but center is slightly fudgy.
  • 8. Cool completely before slicing into squares.

Notes

  • For extra gooey brownies, slightly underbake and chill before slicing.
  • Swap almond flour for oat flour if preferred.
  • Store brownies in the fridge for up to 5 days, or freeze for up to 2 months.
  • These brownies pack extra protein, making them great as a post-workout snack or healthier dessert.
