Cranberry Walnut Bread Loaf

Description

A moist, lightly sweetened quick bread filled with tart cranberries and crunchy walnuts, perfect for breakfast, snacking, or holiday gifting.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 3/4 cup orange juice
  • 1/4 cup melted butter (or oil)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp orange zest
  • 1 cup fresh or frozen cranberries, chopped
  • 3/4 cup walnuts, chopped

Instructions

  • 1. Preheat oven to 350ยฐF (175ยฐC) and grease a 9×5-inch loaf pan.
  • 2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
  • 3. In a separate bowl, whisk together orange juice, melted butter, egg, vanilla, and orange zest.
  • 4. Pour wet ingredients into dry ingredients and stir just until combined โ€” do not overmix.
  • 5. Fold in chopped cranberries and walnuts.
  • 6. Pour batter into prepared loaf pan and smooth the top.
  • 7. Bake for 50โ€“60 minutes, or until a toothpick inserted into the center comes out clean.
  • 8. Let cool in the pan for 10 minutes, then remove and cool completely on a wire rack before slicing.

Notes

  • You can substitute pecans for walnuts if desired.
  • For an extra festive touch, drizzle the cooled loaf with an orange glaze made from powdered sugar and orange juice.
  • The bread keeps well wrapped at room temperature for 3 days or can be frozen for up to 2 months.
