Description

No-bake energy bites made with dates, oats, rice krispies, and almond butter. These wholesome snacks are naturally sweet, crunchy, and perfect for quick energy boosts.


Instructions

  1. Add pitted dates and oats to a food processor. Pulse until mixture forms a coarse, sticky dough
  2. Transfer date mixture to a large mixing bowl. Add rice krispies cereal, almond butter, vanilla, and salt
  3. Use your hands to mix everything thoroughly until well combined
  4. Scoop about 1 tablespoon of mixture and roll firmly between palms to form a ball
  5. Repeat with remaining mixture. Place balls on a tray
  6. Chill for 30 minutes to firm up before serving

Notes

Use soft, sticky Medjool dates for best texture. If dates are dry, soak in warm water for 10 minutes then drain.

Wet hands slightly before rolling to prevent sticking.

Store in airtight container in refrigerator for up to 2 weeks or freeze for up to 3 months.

For gluten-free version, use certified gluten-free oats and cereal.
