- 1/2 cup unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup coconut oil or dairy-free butter, softened
- 3/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 tbsp milk (dairy or non-dairy)
- 1/2 cup chocolate chips (plus extra for drizzle)
- 1 tsp coconut oil (for drizzle)
Instructions
- 1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- 2. In a medium bowl, whisk together gluten-free flour, cocoa powder, baking soda, and salt.
- 3. In a large bowl, beat coconut oil with both sugars until creamy.
- 4. Add egg, vanilla, and milk, and mix until smooth.
- 5. Gradually stir in the dry ingredients until a thick dough forms.
- 6. Fold in the chocolate chips.
- 7. Scoop dough by rounded tablespoons onto the baking sheet, spacing evenly.
- 8. Bake for 9–11 minutes, until cookies are set around the edges.
- 9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
- 10. Melt extra chocolate chips with coconut oil in the microwave, then drizzle over cooled cookies.
- 11. Let drizzle set before serving or storing.

- Use a quality gluten-free flour blend that includes xanthan gum.
- Dark chocolate chips make an extra rich drizzle.
- Cookies store well in an airtight container at room temperature for up to 5 days.
