Description
Drizzle Chocolate Cookies made with gluten-free flour and topped with a beautiful chocolate drizzle—perfect for indulgent snacking or special occasions.
Ingredients
1 cup gluten-free all-purpose flour (with xanthan gum)
1/2 cup unsweetened cocoa powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup coconut oil or dairy-free butter, softened
3/4 cup brown sugar, packed
1/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
2 tbsp milk (dairy or non-dairy)
1/2 cup chocolate chips (plus extra for drizzle)
1 tsp coconut oil (for drizzle)
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a medium bowl, whisk together gluten-free flour, cocoa powder, baking soda, and salt.
3. In a large bowl, beat coconut oil with both sugars until creamy.
4. Add egg, vanilla, and milk, and mix until smooth.
5. Gradually stir in the dry ingredients until a thick dough forms.
6. Fold in the chocolate chips.
7. Scoop dough by rounded tablespoons onto the baking sheet, spacing evenly.
8. Bake for 9–11 minutes, until cookies are set around the edges.
9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
10. Melt extra chocolate chips with coconut oil in the microwave, then drizzle over cooled cookies.
11. Let drizzle set before serving or storing.
Notes
Use a quality gluten-free flour blend that includes xanthan gum.
Dark chocolate chips make an extra rich drizzle.
Cookies store well in an airtight container at room temperature for up to 5 days.
For extra flair, sprinkle with sea salt before the drizzle sets.
