Description

Inspired by Crumblโ€™s luxurious Dubai Chocolate Brownie cookie, this rich treat combines a fudgy brownie cookie base with silky ganache frosting and a touch of gold for a show-stopping finish.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/4 cups brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup semisweet chocolate chips
  • Chocolate Ganache Frosting:
  • 1 cup dark chocolate chips or chopped chocolate
  • 1/2 cup heavy cream
  • 1 tbsp butter
  • Optional topping: edible gold leaf, cocoa powder dust, chocolate curls

Instructions

  • 1. Preheat oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
  • 2. In a large mixing bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  • 3. Add eggs and vanilla, mixing until well combined.
  • 4. In another bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  • 5. Gradually mix dry ingredients into wet ingredients until a thick dough forms.
  • 6. Fold in the chocolate chips.
  • 7. Scoop large portions of dough (about 1/4 cup each) and place on the prepared baking sheet, spacing them apart.
  • 8. Gently flatten each dough ball slightly.
  • 9. Bake for 10โ€“12 minutes, until edges are set but centers are soft.
  • 10. Cool cookies completely on the baking sheet.
  • 11. Meanwhile, make the ganache: heat heavy cream until just simmering, then pour over chocolate chips and butter. Let sit for 2 minutes, then whisk until smooth and glossy.
  • 12. Spread or pipe ganache over cooled cookies.
  • 13. Dust with cocoa powder or decorate with gold leaf for an elegant finish.

Notes

  • These cookies are best served slightly chilled for a truffle-like texture.
  • Store in an airtight container in the refrigerator for up to 5 days.
  • For extra decadence, top with a drizzle of melted chocolate before adding the gold leaf.
