Luxuriously rich chocolate cookies inspired by Dubai’s love of bold flavor and indulgence—featuring dark chocolate, a touch of cardamom, and a hint of rose for a unique Middle Eastern twist.
Ingredients
1 cup unsalted butter, softened
3/4 cup brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon rose water (optional)
2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon ground cardamom
1/2 teaspoon salt
1 1/2 cups dark chocolate chunks or chips
Optional garnish: edible gold leaf or chopped pistachios
Instructions
1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
2. In a large bowl, cream together butter, brown sugar, and granulated sugar until fluffy.
3. Add eggs, vanilla extract, and rose water (if using). Mix until well combined.
4. In a separate bowl, whisk together flour, cocoa powder, baking soda, cardamom, and salt.
5. Gradually add dry ingredients to wet mixture and stir until fully incorporated.
6. Fold in dark chocolate chunks.
7. Scoop dough into rounded tablespoons and place 2 inches apart on baking sheets.
8. Bake for 10–12 minutes or until edges are set and centers are slightly soft.
9. Cool on baking sheet for 5 minutes before transferring to a wire rack.
10. Top with gold leaf or pistachios if desired once cookies are fully cooled.
