- 1 cup pitted Medjool dates
- 1/2 cup hot water
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/3 cup unsweetened cocoa powder
- 1 tsp ground cardamom
- 1/4 tsp salt
- 1/2 tsp baking soda
- 2 large eggs
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/2 cup dark chocolate chips (gluten-free certified)
Instructions
- 1. Preheat the oven to 350°F (175°C) and line a loaf pan or small baking dish with parchment paper.
- 2. Soak the dates in hot water for 10 minutes to soften, then drain and mash into a paste.
- 3. In a large bowl, whisk together almond flour, coconut flour, cocoa powder, cardamom, salt, and baking soda.
- 4. In a separate bowl, mix eggs, melted coconut oil, maple syrup, vanilla extract, and the date paste until smooth.
- 5. Combine the wet ingredients with the dry ingredients and stir until fully incorporated.
- 6. Fold in the dark chocolate chips.
- 7. Pour the batter into the prepared pan and spread evenly.
- 8. Bake for 25–30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
- 9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- For a more decadent treat, serve warm with a scoop of dairy-free vanilla ice cream.
