A rich, indulgent gluten-free chocolate dessert inspired by the luxurious flavors of Dubai, featuring dates, cardamom, and premium dark chocolate.
Ingredients
1 cup pitted Medjool dates
1/2 cup hot water
1/2 cup almond flour
1/4 cup coconut flour
1/3 cup unsweetened cocoa powder
1 tsp ground cardamom
1/4 tsp salt
1/2 tsp baking soda
2 large eggs
1/4 cup melted coconut oil
1/4 cup maple syrup
1 tsp vanilla extract
1/2 cup dark chocolate chips (gluten-free certified)
Instructions
1. Preheat the oven to 350°F (175°C) and line a loaf pan or small baking dish with parchment paper.
2. Soak the dates in hot water for 10 minutes to soften, then drain and mash into a paste.
3. In a large bowl, whisk together almond flour, coconut flour, cocoa powder, cardamom, salt, and baking soda.
4. In a separate bowl, mix eggs, melted coconut oil, maple syrup, vanilla extract, and the date paste until smooth.
5. Combine the wet ingredients with the dry ingredients and stir until fully incorporated.
6. Fold in the dark chocolate chips.
7. Pour the batter into the prepared pan and spread evenly.
8. Bake for 25–30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
9. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
For a more decadent treat, serve warm with a scoop of dairy-free vanilla ice cream.
