- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 Earl Grey tea bags (or 2 teaspoons loose leaf)
- 1 teaspoon dried culinary lavender, finely chopped
- 1/4 teaspoon salt
- Optional: coarse sugar for sprinkling
Instructions
- 1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- 2. In a large bowl, cream together butter and powdered sugar until light and fluffy.
- 3. Mix in vanilla extract.
- 4. In a separate bowl, whisk together flour, tea leaves, lavender, and salt.
- 5. Gradually add dry ingredients to the butter mixture, mixing until a soft dough forms.
- 6. Roll dough into a log, wrap in plastic, and chill for at least 30 minutes.
- 7. Slice dough into 1/4-inch rounds and place on prepared baking sheet.
- 8. Sprinkle tops with coarse sugar if desired.
- 9. Bake for 12–14 minutes or until edges are just turning golden.
- 10. Cool on a wire rack before serving.
Notes
- Use culinary-grade lavender only too much can overpower the cookies.
- Chilling the dough helps keep the cookie shape during baking.
- These cookies store well in an airtight container for up to 1 week.
