Instructions

  • 1. In a bowl, mix shredded coconut, chopped cherries, and sweetened condensed milk until combined.
  • 2. Refrigerate mixture for 20โ€“30 minutes, until firm enough to shape.
  • 3. Roll mixture into small balls and place on a parchment-lined baking sheet.
  • 4. Freeze for 15 minutes to firm up.
  • 5. Melt chocolate chips with coconut oil until smooth.
  • 6. Dip chilled balls into melted chocolate, coating completely.
  • 7. Return truffles to parchment-lined sheet.
  • 8. Refrigerate until chocolate is set before serving.
