Instructions
- 1. In a bowl, mix shredded coconut, chopped cherries, and sweetened condensed milk until combined.
- 2. Refrigerate mixture for 20โ30 minutes, until firm enough to shape.
- 3. Roll mixture into small balls and place on a parchment-lined baking sheet.
- 4. Freeze for 15 minutes to firm up.
- 5. Melt chocolate chips with coconut oil until smooth.
- 6. Dip chilled balls into melted chocolate, coating completely.
- 7. Return truffles to parchment-lined sheet.
- 8. Refrigerate until chocolate is set before serving.
