Description

Tender, buttery gluten-free almond scones made with just seven simple ingredients soft, fragrant, and perfect for breakfast or tea.


Ingredients

  • 2 cups gluten-free all-purpose flour (with xanthan gum)
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup milk or cream
  • 1 teaspoon almond extract
  • Optional: sliced almonds for topping

Instructions

  • 1. Preheat oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper.
  • 2. Whisk gluten-free flour, sugar, baking powder, and salt in a bowl.
  • 3. Cut in the cold butter using fingers or a pastry cutter until pea-sized crumbs form.
  • 4. Stir in milk and almond extract until a soft dough comes together.
  • 5. Turn dough onto a lightly floured surface and gently pat into a 1-inch thick circle.
  • 6. Cut into 8 wedges and place on the prepared baking sheet.
  • 7. Sprinkle with sliced almonds if desired.
  • 8. Bake for 14โ€“17 minutes or until lightly golden around the edges.
  • 9. Cool slightly before serving.

Notes

  • For extra richness, brush the tops with cream before baking.
  • If your GF flour blend lacks xanthan gum, add 1 teaspoon for better structure.
  • Drizzle cooled scones with a simple powdered sugarโ€“almond extract glaze for added sweetness.
