- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 1/2 cup milk or cream
- 1 teaspoon almond extract
- Optional: sliced almonds for topping
Instructions
- 1. Preheat oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper.
- 2. Whisk gluten-free flour, sugar, baking powder, and salt in a bowl.
- 3. Cut in the cold butter using fingers or a pastry cutter until pea-sized crumbs form.
- 4. Stir in milk and almond extract until a soft dough comes together.
- 5. Turn dough onto a lightly floured surface and gently pat into a 1-inch thick circle.
- 6. Cut into 8 wedges and place on the prepared baking sheet.
- 7. Sprinkle with sliced almonds if desired.
- 8. Bake for 14โ17 minutes or until lightly golden around the edges.
- 9. Cool slightly before serving.

- If your GF flour blend lacks xanthan gum, add 1 teaspoon for better structure.
