- 1 tablespoon instant coffee or espresso powder
- 1/4 cup cocoa powder, for rolling
Instructions
- 1. Place chocolate chips in a heatproof bowl.
- 2. Heat heavy cream in a small saucepan until just beginning to simmer.
- 3. Stir instant coffee into the hot cream until dissolved.
- 4. Pour the hot cream mixture over the chocolate chips.
- 5. Let sit for 2 minutes, then whisk until smooth and glossy.
- 6. Refrigerate for 1โ2 hours, until firm enough to scoop.
- 7. Scoop small portions and roll into balls.
- 8. Roll truffles in cocoa powder to coat.
- 9. Store chilled until ready to serve.
