- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/4 cup cocoa powder
- 1/2 cup finely chopped pecans
- 12 soft caramel candies
- 2 tablespoons heavy cream
- 1/4 cup melted chocolate
Instructions
- 1. Preheat oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
- 2. In a bowl, cream butter and sugar until light and fluffy.
- 3. Mix in egg yolk and vanilla extract until combined.
- 4. Stir in flour and cocoa powder to form a soft dough.
- 5. Roll dough into 1-inch balls, then roll each ball in chopped pecans.
- 6. Place cookies on the prepared baking sheet and press a thumbprint into the center of each.
- 7. Bake for 10โ12 minutes, until set.
- 8. While cookies cool slightly, melt caramels with heavy cream until smooth.
- 9. Spoon caramel into each thumbprint and drizzle with melted chocolate.
- 10. Allow caramel to set before serving.
Notes
- If thumbprints puff up while baking, gently re-press while warm.
- Store cookies in an airtight container for up to 4 days.
