- 1 1/4 cups gluten-free all-purpose flour (with xanthan gum)
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup coconut oil or vegan butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tbsp milk (dairy or non-dairy)
- Extra sugar for rolling
Instructions
- 1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- 2. In a medium bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt.
- 3. In a separate large bowl, beat together the coconut oil and sugar until light and fluffy.
- 4. Add the egg, vanilla extract, and milk to the wet mixture and mix until combined.
- 5. Gradually stir the dry ingredients into the wet ingredients until a soft dough forms.
- 6. Scoop tablespoon-sized balls of dough and roll them in sugar.
- 7. Place dough balls on the prepared baking sheet, spacing them 2 inches apart.
- 8. Slightly flatten each ball with your fingers or the bottom of a glass.
- 9. Bake for 9–11 minutes, or until the edges are just turning golden.
- 10. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- For best texture, do not overbake the cookies will continue to set as they cool.
- Store in an airtight container at room temperature for up to 1 week.
- Add a few drops of almond or lemon extract for flavor variety.
- Use a 1:1 gluten-free flour blend that includes xanthan gum for best results.
