Description
A moist, fragrant flourless orange pistachio cake made with whole oranges, ground pistachios, and almonds naturally gluten-free and full of citrus flavor.

- 2 medium oranges
- 6 large eggs
- 1 cup granulated sugar
- 1 1/2 cups ground pistachios
- 1 cup almond flour
- 1 tsp baking powder
- 1/2 tsp cardamom (optional)
- Powdered sugar, chopped pistachios, or orange zest for garnish
Instructions
- 1. Place whole oranges (unpeeled) in a saucepan, cover with water, and bring to a boil. Simmer for 1 hour, then drain and cool completely.
- 2. Cut the oranges into pieces, remove any seeds, and blend into a smooth purรฉe.
- 3. Preheat oven to 350ยฐF (175ยฐC). Line the bottom of a 9-inch round cake pan with parchment paper and grease lightly.
- 4. In a large bowl, whisk eggs and sugar until pale and fluffy.
- 5. Add the orange purรฉe and mix well.
- 6. Stir in ground pistachios, almond flour, baking powder, and cardamom (if using) until fully combined.
- 7. Pour the batter into the prepared pan and smooth the top.
- 8. Bake for 45โ50 minutes, or until a toothpick inserted in the center comes out clean.
- 9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- 10. Dust with powdered sugar and garnish with chopped pistachios or extra orange zest before serving.

- This cake is naturally gluten-free, dairy-free, and wonderfully moist thanks to the orange purรฉe.
- For extra flavor, drizzle with a light orange syrup made from orange juice and honey.
