Description

A moist, fragrant flourless orange pistachio cake made with whole oranges, ground pistachios, and almonds naturally gluten-free and full of citrus flavor.


Ingredients

  • 2 medium oranges
  • 6 large eggs
  • 1 cup granulated sugar
  • 1 1/2 cups ground pistachios
  • 1 cup almond flour
  • 1 tsp baking powder
  • 1/2 tsp cardamom (optional)
  • Powdered sugar, chopped pistachios, or orange zest for garnish

Instructions

  • 1. Place whole oranges (unpeeled) in a saucepan, cover with water, and bring to a boil. Simmer for 1 hour, then drain and cool completely.
  • 2. Cut the oranges into pieces, remove any seeds, and blend into a smooth purรฉe.
  • 3. Preheat oven to 350ยฐF (175ยฐC). Line the bottom of a 9-inch round cake pan with parchment paper and grease lightly.
  • 4. In a large bowl, whisk eggs and sugar until pale and fluffy.
  • 5. Add the orange purรฉe and mix well.
  • 6. Stir in ground pistachios, almond flour, baking powder, and cardamom (if using) until fully combined.
  • 7. Pour the batter into the prepared pan and smooth the top.
  • 8. Bake for 45โ€“50 minutes, or until a toothpick inserted in the center comes out clean.
  • 9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • 10. Dust with powdered sugar and garnish with chopped pistachios or extra orange zest before serving.
