- 3 large eggs, separated
- 1/3 cup cottage cheese (full-fat, small curd)
- 1/4 tsp cream of tartar
- 1/4 tsp salt
- Optional: pinch of garlic powder or herbs for flavor
Instructions
- 1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
- 2. Separate the eggs carefully, placing whites in a clean, dry mixing bowl and yolks in a separate bowl.
- 3. To the yolks, add cottage cheese and salt (plus any optional seasonings), and blend until smooth using a food processor or immersion blender.
- 4. Beat the egg whites and cream of tartar with an electric mixer on high speed until stiff peaks form.
- 5. Gently fold the yolk mixture into the beaten egg whites using a spatula, being careful not to deflate the whites.
- 6. Scoop the batter into 6–8 even rounds on the prepared baking sheet.
- 7. Bake for 25–30 minutes, or until lightly golden and firm to the touch.
- 8. Let cool slightly before removing from parchment. Use immediately or store in an airtight container.
