Description

Ingredients

  • 3 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/2 teaspoon salt
  • 3/4 cup warm milk
  • 2 large eggs
  • 3 tablespoons unsalted butter, softened
  • 1 teaspoon vanilla extract
  • Vegetable oil for frying
  • Powdered sugar, for dusting

Instructions

  • 1. In a small bowl, dissolve yeast in warm milk with 1 teaspoon sugar. Let sit until foamy, about 5โ€“10 minutes.
  • 2. In a large mixing bowl, combine flour, remaining sugar, and salt.
  • 3. Add eggs, butter, vanilla, and yeast mixture to the dry ingredients. Mix until a soft dough forms.
  • 4. Knead dough on a lightly floured surface for 5โ€“7 minutes until smooth and elastic.
  • 5. Place dough in a greased bowl, cover, and let rise for 1โ€“2 hours until doubled in size.
  • 6. Punch down dough and roll out to about 1/4-inch thickness. Cut into 2-inch squares or rounds.
  • 7. Heat oil in a deep pot to 350ยฐF (175ยฐC). Fry beignets in batches until golden brown, about 1โ€“2 minutes per side.
  • 8. Drain on paper towels and generously dust with powdered sugar before serving.

Notes

  • Best enjoyed warm and fresh, right after frying.
  • You can also fill these beignets with jam, Nutella, or pastry cream for a decadent twist.
  • If dough is too sticky, add a little more flour while kneading.
