- 3 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 packet (2 1/4 tsp) active dry yeast
- 1/2 teaspoon salt
- 3/4 cup warm milk
- 2 large eggs
- 3 tablespoons unsalted butter, softened
- 1 teaspoon vanilla extract
- Vegetable oil for frying
- Powdered sugar, for dusting
Instructions
- 1. In a small bowl, dissolve yeast in warm milk with 1 teaspoon sugar. Let sit until foamy, about 5โ10 minutes.
- 2. In a large mixing bowl, combine flour, remaining sugar, and salt.
- 3. Add eggs, butter, vanilla, and yeast mixture to the dry ingredients. Mix until a soft dough forms.
- 4. Knead dough on a lightly floured surface for 5โ7 minutes until smooth and elastic.
- 5. Place dough in a greased bowl, cover, and let rise for 1โ2 hours until doubled in size.
- 6. Punch down dough and roll out to about 1/4-inch thickness. Cut into 2-inch squares or rounds.
- 7. Heat oil in a deep pot to 350ยฐF (175ยฐC). Fry beignets in batches until golden brown, about 1โ2 minutes per side.
- 8. Drain on paper towels and generously dust with powdered sugar before serving.
Notes
- Best enjoyed warm and fresh, right after frying.
- You can also fill these beignets with jam, Nutella, or pastry cream for a decadent twist.
- If dough is too sticky, add a little more flour while kneading.
