  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup milk (dairy or non-dairy)
  • 1 tsp vanilla extract
  • 1/2 cup Fruity Pebbles cereal (plus more for topping)
  • For the frosting:
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 12 tbsp milk
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • Fruity Pebbles cereal for garnish

Instructions

  • 1. Preheat oven to 350°F (175°C) and line a cupcake tin with paper liners.
  • 2. In a medium bowl, whisk together flour, baking powder, and salt.
  • 3. In a large bowl, cream butter and sugar until light and fluffy.
  • 4. Add eggs one at a time, beating well after each addition.
  • 5. Mix in vanilla extract.
  • 6. Add dry ingredients to the butter mixture in batches, alternating with milk, mixing until just combined.
  • 7. Fold in Fruity Pebbles cereal.
  • 8. Divide batter evenly among cupcake liners, filling each about 2/3 full.
  • 9. Bake for 18–20 minutes, or until a toothpick inserted comes out clean.
  • 10. Cool in pan 5 minutes, then transfer to a wire rack to cool completely.
  • 11. To make frosting, beat butter until creamy, then add powdered sugar, milk, vanilla, and salt. Beat until smooth and fluffy.
  • 12. Frost cooled cupcakes and top generously with Fruity Pebbles cereal.

Notes

  • Fruity Pebbles may soften slightly in the batter but still add color and sweetness.
