Description

Fun and colorful Fruity Pebbles cupcakes made with vanilla cake and cereal inside and out—perfect for birthdays, parties, or nostalgic sweet treats.


Ingredients

1 1/4 cups all-purpose flour

1 tsp baking powder

1/4 tsp salt

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

2 large eggs

1/2 cup milk (dairy or non-dairy)

1 tsp vanilla extract

1/2 cup Fruity Pebbles cereal (plus more for topping)

For the frosting:

1/2 cup unsalted butter, softened

1 1/2 cups powdered sugar

12 tbsp milk

1/2 tsp vanilla extract

Pinch of salt

Fruity Pebbles cereal for garnish


Instructions

1. Preheat oven to 350°F (175°C) and line a cupcake tin with paper liners.

2. In a medium bowl, whisk together flour, baking powder, and salt.

3. In a large bowl, cream butter and sugar until light and fluffy.

4. Add eggs one at a time, beating well after each addition.

5. Mix in vanilla extract.

6. Add dry ingredients to the butter mixture in batches, alternating with milk, mixing until just combined.

7. Fold in Fruity Pebbles cereal.

8. Divide batter evenly among cupcake liners, filling each about 2/3 full.

9. Bake for 18–20 minutes, or until a toothpick inserted comes out clean.

10. Cool in pan 5 minutes, then transfer to a wire rack to cool completely.

11. To make frosting, beat butter until creamy, then add powdered sugar, milk, vanilla, and salt. Beat until smooth and fluffy.

12. Frost cooled cupcakes and top generously with Fruity Pebbles cereal.

Notes

Fruity Pebbles may soften slightly in the batter but still add color and sweetness.

Top with cereal just before serving to maintain crunch.

Try a swirl of marshmallow fluff in the frosting for extra fun.

Store cupcakes in an airtight container at room temperature for up to 2 days.
