  • 1 cup shredded sweetened coconut

Instructions

  • 1. Preheat oven to 325ยฐF (165ยฐC). Grease and flour a bundt pan.
  • 2. In a large bowl, cream butter and sugar until light and fluffy.
  • 3. Beat in eggs one at a time, then stir in vanilla extract.
  • 4. In another bowl, whisk together flour, cocoa powder, baking powder, and salt.
  • 5. Gradually add dry ingredients to creamed mixture, alternating with sour cream, beginning and ending with dry ingredients.
  • 6. Fold in chopped pecans.
  • 7. Pour batter into prepared bundt pan and bake for 60โ€“70 minutes, or until a toothpick inserted in the center comes out clean.
