- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 tsp baking powder

- 1 cup sour cream
- 1 cup chopped pecans

- 1/2 cup evaporated milk
- 1/2 cup brown sugar
- 1/4 cup unsalted butter
- 2 egg yolks, beaten
- 1 tsp vanilla extract
- 1 cup shredded sweetened coconut
- 1/2 cup chopped pecans
Instructions
- 1. Preheat oven to 325ยฐF (165ยฐC). Grease and flour a bundt pan.
- 2. In a large bowl, cream butter and sugar until light and fluffy.
- 3. Beat in eggs one at a time, then stir in vanilla extract.
- 4. In another bowl, whisk together flour, cocoa powder, baking powder, and salt.
- 5. Gradually add dry ingredients to creamed mixture, alternating with sour cream, beginning and ending with dry ingredients.
- 6. Fold in chopped pecans.
- 7. Pour batter into prepared bundt pan and bake for 60โ70 minutes, or until a toothpick inserted in the center comes out clean.
- 8. Cool cake in pan for 15 minutes, then invert onto a wire rack to cool completely.
- 9. Meanwhile, prepare topping: In a saucepan, combine evaporated milk, brown sugar, butter, and egg yolks. Cook over medium heat, stirring constantly, until thickened (about 8โ10 minutes).
- 10. Remove from heat and stir in vanilla, coconut, and pecans.
- 11. Spread topping evenly over cooled cake before serving.

- This cake is rich and best served in small slices.
- You can toast the pecans before adding for extra flavor.
