A moist, fluffy, and delicious gluten-free birthday cake perfect for celebrations of all kinds.
Ingredients
2 1/2 cups gluten-free all-purpose flour (with xanthan gum)
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, softened
1 3/4 cups granulated sugar
4 large eggs, room temperature
1 tablespoon pure vanilla extract
1 cup buttermilk, room temperature
1/2 cup sour cream
Gluten-free sprinkles (optional, for decoration)
Favorite frosting (ensure it’s gluten-free)
Instructions
1. Preheat oven to 350ยฐF (175ยฐC). Grease and line two 9-inch round cake pans with parchment paper.
2. In a medium bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt.
3. In a large bowl, cream the softened butter and sugar until light and fluffy.
4. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
5. Mix in the sour cream, then add the dry ingredients in 3 parts, alternating with the buttermilk. Begin and end with the dry ingredients.
6. Divide the batter evenly between the prepared pans and smooth the tops.
7. Bake for 30โ35 minutes or until a toothpick inserted in the center comes out clean.
8. Allow cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
9. Once cooled, frost with your favorite gluten-free frosting and decorate with gluten-free sprinkles if desired.
Notes
Make sure your gluten-free flour blend includes xanthan gum or add 1 teaspoon if it doesn’t.
To make dairy-free, use plant-based butter, dairy-free yogurt instead of sour cream, and almond milk with a teaspoon of vinegar in place of buttermilk.
This cake can be made a day ahead and kept refrigerated. Bring to room temperature before serving.
