- 3 large eggs, separated
- 3 tbsp cream cheese or cottage cheese
- 1/4 tsp cream of tartar
- 2 tbsp erythritol or preferred sweetener
- 1/2 tsp vanilla extract
- Pinch of salt
- Whipped cream (for serving)
- Fresh berries or fruit compote (for topping)
Instructions
- 1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
- 2. Separate eggs, placing yolks in one bowl and whites in another.
- 3. To the yolks, add cream cheese, sweetener, vanilla extract, and salt. Blend until smooth.
- 4. Add cream of tartar to the egg whites and beat with an electric mixer until stiff peaks form.
- 5. Gently fold the yolk mixture into the whipped egg whites until combined without deflating.
- 6. Spoon mixture into 6 even rounds on the baking sheet.
- 7. Bake for 25–30 minutes, or until golden and set.
- 8. Cool completely before serving.
- 9. Top with whipped cream and berries or a drizzle of fruit compote.
Notes
- For extra sweetness, add a dusting of powdered erythritol before serving.
- Use dairy-free whipped topping if needed to keep it lactose-free.
- Store plain cloud bread in an airtight container for up to 2 days.
