- 1 box (15 oz) gluten-free yellow cake mix
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 tsp vanilla extract
- 1 cup powdered sugar, for rolling
Instructions
- 1. In a large bowl, beat cream cheese and butter until smooth and fluffy.
- 2. Add egg and vanilla extract, mixing until combined.
- 3. Stir in gluten-free cake mix until a soft dough forms.
- 4. Cover dough and chill for 30 minutes to firm up.
- 5. Preheat oven to 350ยฐF (175ยฐC). Line a baking sheet with parchment paper.
- 6. Scoop tablespoon-sized portions of dough, roll into balls, and coat in powdered sugar.
- 7. Place on prepared baking sheet about 2 inches apart.
- 8. Bake for 10โ12 minutes, until cookies are set but still soft in the center.
- 9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Notes
- Chilling the dough helps make rolling easier and prevents spreading.
- Do not overbake โ the cookies should be soft and gooey in the middle.
- Store in an airtight container at room temperature for up to 4 days, or freeze for longer storage.
