Description

Ingredients

  • 1 box (15 oz) gluten-free yellow cake mix
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup powdered sugar, for rolling

Instructions

  • 1. In a large bowl, beat cream cheese and butter until smooth and fluffy.
  • 2. Add egg and vanilla extract, mixing until combined.
  • 3. Stir in gluten-free cake mix until a soft dough forms.
  • 4. Cover dough and chill for 30 minutes to firm up.
  • 5. Preheat oven to 350ยฐF (175ยฐC). Line a baking sheet with parchment paper.
  • 6. Scoop tablespoon-sized portions of dough, roll into balls, and coat in powdered sugar.
  • 7. Place on prepared baking sheet about 2 inches apart.
  • 8. Bake for 10โ€“12 minutes, until cookies are set but still soft in the center.
  • 9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.

  • Chilling the dough helps make rolling easier and prevents spreading.
