- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup old-fashioned oats
- 1 cup crispy rice cereal
- 1/2 cup sweetened shredded coconut
Instructions
- 1. Preheat oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
- 2. In a bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
- 3. Mix in egg and vanilla extract until combined.
- 4. Stir in flour, baking soda, and salt until just incorporated.
- 5. Fold in oats, crispy rice cereal, and shredded coconut.
- 6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet.
- 7. Bake for 10โ12 minutes, until edges are lightly golden.
- 8. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Add chocolate chips or chopped nuts for variation.
- Do not overbake to keep cookies chewy.
