A moist, rich, better-for-you chocolate zucchini bread made with wholesome ingredients and naturally sweetened for a guilt-free treat.

- 1 cup whole wheat flour or white whole wheat flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 2 large eggs
- 1/3 cup melted coconut oil or olive oil
- 1/2 cup maple syrup or honey
- 1 tsp vanilla extract
- 1 1/2 cups grated zucchini, excess moisture lightly squeezed
- 1/2 cup dark chocolate chips (optional)
Instructions
- 1. Preheat oven to 350ยฐF (175ยฐC). Line a loaf pan with parchment paper or grease well.
- 2. In a medium bowl, whisk together flour, cocoa powder, baking soda, baking powder, salt, and cinnamon.
- 3. In a large bowl, whisk the eggs, coconut oil, maple syrup, and vanilla until smooth.
- 4. Add the dry ingredients to the wet mixture and stir until just combined.
- 5. Fold in the grated zucchini and chocolate chips if using.
- 6. Pour the batter into the prepared loaf pan and smooth the top.
- 7. Bake for 45โ55 minutes or until a toothpick inserted into the center comes out clean.
- 8. Cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely before slicing.
Notes
- Lightly squeezing the zucchini prevents excess moisture but keeps the bread tender.
- Use mini chocolate chips for more even distribution.
- This bread freezes well slice and freeze for quick snacks.
