A healthier spin on the nostalgic cosmic brownies—fudgy, rich, and topped with colorful sprinkles, but made with wholesome ingredients and no refined sugar.
Ingredients
1/2 cup almond flour
1/4 cup cocoa powder
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 cup maple syrup
1/4 cup unsweetened applesauce
1/4 cup almond butter (or peanut butter)
1 large egg
1/2 teaspoon vanilla extract
1/3 cup dark chocolate chips
2 tablespoons milk (dairy or non-dairy)
Rainbow sprinkles (naturally colored, optional)
Instructions
1. Preheat oven to 350°F (175°C). Line a small square baking pan (8×8-inch) with parchment paper.
2. In a medium bowl, whisk together almond flour, cocoa powder, salt, and baking soda.
3. In another bowl, mix maple syrup, applesauce, almond butter, egg, and vanilla extract until smooth.
4. Add dry ingredients to the wet and stir until well combined.
5. Spread batter evenly in the prepared baking pan.
6. Bake for 18–22 minutes, or until set and a toothpick comes out mostly clean.
7. While brownies cool, melt chocolate chips with milk in the microwave or on the stove until smooth.
8. Spread melted chocolate over cooled brownies and top with sprinkles.
9. Refrigerate for 30 minutes to set the topping before slicing.
Notes
For vegan brownies, use a flax egg and dairy-free chocolate.
Store brownies in the fridge for up to 5 days or freeze for longer storage.
Use naturally dyed sprinkles for a healthier decoration.
