Description

Soft, chocolatey hot cocoa cookies made with just seven simple ingredients rich, fudgy, and incredibly easy to make.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 packet (about 1 oz) hot cocoa mix
  • 1 teaspoon baking powder
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  • 1. Preheat oven to 350ยฐF (175ยฐC). Line a baking sheet with parchment paper.
  • 2. Whisk together flour, hot cocoa mix, and baking powder in a bowl.
  • 3. In another bowl, cream butter and sugar until light and fluffy.
  • 4. Add egg and vanilla extract; mix until smooth.
  • 5. Add dry ingredients and mix until a soft dough forms.
  • 6. Scoop tablespoon-sized portions of dough and place on the baking sheet.
  • 7. Bake for 10โ€“12 minutes or until cookies are set but still soft in the center.
  • 8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • Use your favorite hot cocoa mix regular or dark chocolate both work well.
  • For a richer cookie, slightly underbake for a fudgy center.
  • Cookies stay soft for several days when stored in an airtight container.
