Soft, chocolatey hot cocoa cookies made with just seven simple ingredients rich, fudgy, and incredibly easy to make.

- 1 1/2 cups all-purpose flour
- 1 packet (about 1 oz) hot cocoa mix
- 1 teaspoon baking powder
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- 1. Preheat oven to 350ยฐF (175ยฐC). Line a baking sheet with parchment paper.
- 2. Whisk together flour, hot cocoa mix, and baking powder in a bowl.
- 3. In another bowl, cream butter and sugar until light and fluffy.
- 4. Add egg and vanilla extract; mix until smooth.
- 5. Add dry ingredients and mix until a soft dough forms.
- 6. Scoop tablespoon-sized portions of dough and place on the baking sheet.
- 7. Bake for 10โ12 minutes or until cookies are set but still soft in the center.
- 8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Use your favorite hot cocoa mix regular or dark chocolate both work well.
- For a richer cookie, slightly underbake for a fudgy center.
- Cookies stay soft for several days when stored in an airtight container.
