Instructions
- 1. Preheat oven to 350ยฐF (175ยฐC). Line a baking sheet with parchment paper.
- 2. In a medium bowl, whisk together powdered erythritol, cocoa powder, and salt.
- 3. Add egg whites and vanilla extract, stirring until a thick, glossy batter forms.
- 4. Fold in sugar-free chocolate chips if using.
- 5. Scoop tablespoon-sized portions onto the prepared baking sheet, spacing evenly.
- 6. Bake for 10โ12 minutes or until the tops are shiny and crackly.
- 7. Let cookies cool completely on the baking sheet before removingโthey will firm up as they cool.
