Bright, refreshing no-bake lemon blueberry cottage cheese protein bites made with simple ingredients for a high-protein, grab-and-go snack.
Ingredients

- 1 cup cottage cheese (full-fat or low-fat)
- 1/2 cup vanilla protein powder
- 2 tbsp honey or maple syrup
- 1 tbsp lemon zest
- 2 tbsp lemon juice
- 1/2 cup fresh or frozen blueberries
- 1 cup quick oats
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions
- 1. Add cottage cheese, protein powder, honey, lemon zest, lemon juice, vanilla, and salt to a food processor.
- 2. Blend until smooth and creamy.
- 3. Transfer mixture to a bowl and stir in oats until fully combined.
- 4. Gently fold in blueberries.
- 5. Refrigerate mixture for 20โ30 minutes to firm slightly.
- 6. Scoop and roll into bite-sized balls using lightly damp hands.
- 7. Place onto a parchment-lined tray and refrigerate for 1โ2 hours to set.
- 8. Store bites in an airtight container in the refrigerator for up to 5 days.
Notes
- If the mixture is too soft to roll, add 1โ2 extra tablespoons of oats.
- Frozen blueberries work well but may tint the mixture purpleย still delicious!
- Use lemon-flavored protein powder for an extra citrus boost.
