These lemon blueberry oatmeal bars are incredibly simple to prepare, offering a fantastic balance of bright, zesty lemon and sweet, juicy blueberries. Ingredients
2 ½ cups Old-fashioned rolled oats
1 ½ cups All-purpose flour
½ cup Light brown sugar, packed
¼ cup Granulated sugar
1 teaspoon Baking powder
½ teaspoon Salt
¾ cup Unsalted butter, melted
1 teaspoon Vanilla extract
2 tablespoons Fresh lemon zest
¼ cup Fresh lemon juice
2 cups Fresh blueberries
1 tablespoon Cornstarch
Instructions
- Preheat your oven to 375°F (190°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides. Lightly spray the parchment paper with non-stick cooking spray
- In a large mixing bowl, combine the rolled oats, all-purpose flour, packed light brown sugar, granulated sugar, baking powder, and salt. Whisk everything together thoroughly until well combined
- Pour the melted unsalted butter and vanilla extract into the dry oat mixture. Add the lemon zest. Stir with a spoon or spatula until the mixture is fully moistened and crumbly. It should resemble wet sand
- Take about two-thirds of the oat mixture and firmly press it evenly into the bottom of the prepared baking pan. Use the back of a spoon or your clean hands to compact it tightly
- In a separate medium bowl, gently combine the fresh blueberries, fresh lemon juice, and cornstarch. Toss until the blueberries are evenly coated
- Evenly spread the blueberry filling over the pressed oat base in the pan. Distribute the berries so they cover the entire surface
- Crumble the remaining one-third of the oat mixture evenly over the blueberry filling. Don’t press this layer down; leave it loose and crumbly
- Place the baking pan in the preheated oven. Bake for 30-35 minutes, or until the topping is golden brown and the blueberry filling is bubbly. The edges should look slightly crisp
- Remove the pan from the oven and place it on a wire rack to cool completely. Do NOT attempt to cut the bars while they are warm, as they will fall apart. Allow them to cool for at least 2-3 hours, or even better, chill them in the refrigerator for an hour or two once they reach room temperature
- Once completely cooled, lift the bars out of the pan using the parchment paper overhang. Transfer them to a cutting board and cut into 12-16 squares. Enjoy your homemade lemon blueberry oatmeal bars!
Notes
Do not use instant oats; they result in a mushy texture. Quick oats can work but may result in softer bars.
For gluten-free bars, use certified gluten-free rolled oats and a gluten-free all-purpose flour blend.
For dairy-free bars, substitute melted coconut oil for the unsalted butter.
Other berries like raspberries, blackberries, mixed berries, or chopped strawberries can be used. If using frozen fruit, do not thaw them before adding to the mixture.
